Crock Pot Picante Chicken

I am going to start calling it the crack pot because of my addiction. I tested Phil tonight just to make sure he wasn't going to hold an intervention - "you still like all these crock pot meals?" to which he answered "hell yeah!" so no worries there!

Anyway - I am in love with the crock pot. Everything about it is just easy peasy lemon squeezy. You dump things in and get deliciousness out. No messing around with pots and pans to clean - you get a one dish meal. And it's a huge timesaver - no waiting around for something to bake in the oven or cook on the stove! And I am allll about saving my time to do other activities! We have a crock pot meal about once a week. Sure, we make other things on the grill, oven, stove.....but this is just the perfect way to eat something healthy during the week - plus with only two of us, we get leftovers for lunch the next day! AND with this recipe, I even had enough to freeze! Double score.

Crock Pot Picante Chicken (adapted from skinnytaste and simplified just a bit!)


Ingredients:
  • 3 boneless skinless chicken breasts
  • 3 1/2 cups low sodium fat free chicken broth
  • 2- 15 oz cans reduced sodium black beans
  • 2- 10 oz. cans Rotel tomatoes with green chiles 
  • 4 oz. can diced green chiles
  • 1 red bell pepper, miced
  • 1/2 cup chopped cilantro, divided
  • 1 TB cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
Directions:
Use a blender to puree 1 can black beans with 2 cups chicken broth, add to crock pot. Add remaining ingredients (only 1/4 cup of the cilantro) and cook on low 6-8 hours. Shred chicken with two forks and return to crock pot. Mix and serve with remaining fresh cilantro.

Review:
It was great! This is more of a soup, but the chicken and beans make it filling. I didn't need any sides with it, Phil thought it could maybe use to tortilla chips as a side. BUT he did say "Wow this is really good!" Plus i had plenty of leftovers. This was rated "Definitely make again".

Calories:
1 1/2 cup gets you 305 calories and fills you right up!

    They are slow cooker liners! You just put it in the crock pot before you start cooking and clean-up is about 100x's easier! Once I discovered them, I started using my crock pot WAY more.
